I just saw the episode from Futurama titled "Where No Fan Has Gone Before"
and noticed that James Doohan was the only original cast member who wasn't
in the show. Later in the show when the Star Trek cast had to fight the
Futurama characters Shatner asked Nimoy if there was a episode were he

It could be that he wasn't in the show due to poor health. The last Trekconvention that I went to (about 3 or so years ago), he looked awful. While
autographing a Hamilton Collection plate with his TOS likeness, he was
concentrating so hard on not messing up that he was actually drooling down
his chin. I felt really bad for him. I think that he must have had a
stroke or heart attack or something because his signature has changed.
Perhaps there are some had feelings with some of the TOS cast members, but I
don't think that would have stopped him from making an appearance based on
that.
